Maui's first destination resort announces sophisticated new dining destination and luxurious guestroom renovations

LAHAINA, HI (August 31, 2010) - Hyatt Regency Maui Resort and Spa announces the upcoming completion of an extensive $15 million transformation. Scheduled for completion in December 2010, the resort will redefine the quintessential Maui experience, making it even more captivating with exquisitely updated guestrooms and an exciting new dining destination, Japengo, which will offer a culinary adventure blending exotic flavors from around the world.

Japengo - Begun in August and scheduled for completion in December 2010, Hyatt Regency Maui's restaurant, Cascades, will be completely redesigned into Japengo, a sexy, hip dining destination for lively Pacific Rim cuisine. With design led by Island Design Center, the dramatic transformation begins with an updated interpretation of a Japanese fishing village, with narrow alleyways and quirky level changes luring guests to the intriguing Moon Bar, Sushi Lounge, and outdoor dining overlooking the ocean. Colors and materials are evocative of the celestial elements of the sun, moon and earth and vary from grounded and earthen, warm and fiery, and lunar and ethereal.

Creating a moonscape at the Moon Bar, an open air garden lounge, ethereal silk pendants orbit above a circular bar created with lunar-toned materials of sliced stone and black pebbles. The Village Alley Walk, covered with mossy green rustic porcelain tiles, leads to the Sushi Lounge, where updated Asian elements and a minimalistic design create a Zen-like backdrop that puts cuisine - and dynamic sushi chefs - front and center. Glowing amber elongated pendant lamps and banquettes of wasabi-green and deep olive create a clubby ambiance. Outside, guests enjoy warm trade winds and exceptional panoramic views of the resort's 40-acre grounds, swimming pools and water features, and views of Molokai'i, Lanai'i and migratory whales from Japengo's elevated positioning. The mood is edgy and intimate with flickering tiki torches, pin spot lighting, and high-backed settees in fiery-hued fabrics.

Part of the resort's extensive $15 million transformation that included the complete renovation of all guestrooms, the $5 million Japengo is a sophisticated dining destination with spectacular panoramic views of the ocean and surrounding islands. Drawing on Hawaii's freshest, locally-grown products, coupled with exotic ingredients from neighboring Pacific Rim countries, Japengo creates a culinary adventure showcasing modern Asian-inspired flavors with Hawaiian flair.

Design - Conceptualized with Island Design Center as an updated interpretation of a Japanese fishing village, Japengo provides a variety of distinctive settings, each offering a unique dining experience. Arriving guests follow the Village Alley Walk, covered with mossy green rustic porcelain tiles, to the vibrant Sushi Lounge. Guests can sip creative specialty cocktails including the Rappongi Fling, with Momokawa Ruby sake, fresh lime, cucumber and ginger ale, and the Asian Pear-suasion, with Absolut Pears vodka, Momokawa Pearl sake, Midori, fresh lime and Thai basil. The Moon Bar's colors and materials are evocative of the celestial elements of the sun, moon and earth, and vary from grounded and earthen, warm and fiery, and lunar and ethereal.

Cuisine - To create Japengo's modern Pacific Rim cuisine, Hyatt Regency Maui Resort and Spa's Executive Chef Matt Smith sources exceptional local produce and products from Maui and the surrounding islands, such as Olowalu tomatoes, Kula lettuces, Alii Kula lavender, Hawaiian red and black sea salt, and freshly caught seafood, and thoughtfully prepares them using authentic Asian cooking methods. Guests' culinary adventure begins with Chef Smith's unique starters, including Seared "Snake River Farms" Kobe Carpaccio with Wasabi Infused Organic Lemon Olive Oil, Watercress, Quail Egg and Shiso Aioli ($21) and Compressed Watermelon & Hamachi Mosaic with Emperor's Ponzu, Rainbow Micro Greens and Tobiko ($18). House specials include Grilled Local Mahi Mahi with Okinawa Tatsoi, Sesame, Pancetta, Lemongrass Beurre Blanc, and Forbidden Rice ($39) and Singaporean Chili Crab with Alaskan King Crab and Spicy Chili Sauce ($46).

At the Sushi Lounge, which seats 49, guests can enjoy refined izakaya (Japanese pub) favorites including Poached Hawaiian Young Abalone with Soy Broth, Daikon Radish, Spicy Chili and Micro Greens ($12) or Spicy Salmon Buns with Maui Onion, Shiso, Kaiware, Bao Buns, Hoisin and Ume ($18). Named after Japengo's benevolent mascot, a Japanese mythological deity and symbol for fertility, Sushi Chef Jay Ledee's signature roll is the Japengo Tengu - an inspired combination featuring whitefish, crab, tuna, avocado, tatsoi, tobiko, and spicy eel aioli, deep-fried in tempura panko batter ($20).

$10 Million Guestroom Renovation - The completion of Japengo is part of an overall $15 million resort renovation that includes a $10 million update to all guestrooms. Hyatt Regency Maui Resort and Spa announces the appointment of two new members to the resort's Food & Beverage team - Gordon Chow has assumed the role of Restaurant Manager of Umalu, while Jonica Reid will be General Manager for Hyatt Regency Maui's exciting new restaurant, Japengo, opening in mid-December. Both contribute a wealth of expertise, earned through numerous years in various areas of the hospitality industry, to their positions at Maui's AAA Four Diamond resort on Ka'anapali Beach.

Jonica Reid will bring almost 22 years of restaurant experience, plus true passion and dedication for the hospitality industry, to her role overseeing Maui's chic new restaurant, Japengo. Reid has honed her skills through front-of-house positions with various Maui restaurants including Cane & Taro and Mama's Fish House, as well as The Chart House in Newport Beach, California. Demonstrating exceptional attention to detail combined with warm and genuine client relations, Reid will be a welcoming presence at the resort's exciting Pacific Rim restaurant.

A native of Canada, Gordon Chow brings more than 20 years of management in hospitality, food & beverage, hotels and airlines to his post at Hyatt's popular two-year old poolside dining destination, Umalu. Most recently a Station Manager with Hawaiian Airlines in Kahului, Maui, Chow has held Director of Food & Beverage positions with Hilton Garden Inn Roseville, Big League Dream Sports Park LLC, and Vacation Inn Hotel & Suites Palm Desert. KAANAPALI, Maui, Hawaii " JUNE 30, 2008 " Hyatt Regency Maui Resort and Spa received this month the prestigious AAA Four Diamond Award for 2009 for the 21st consecutive year. The coveted plaque featuring four raised diamonds and AAA Four Diamond Award logo acknowledges the resort for offering an exceptional guest experience in ambiance, services and hospitality.

One of only six hotels on Maui received the prestigious award, among a total of just 15 resorts throughout Hawaii. To obtain a AAA Four Diamond Award an inspector conducts a physical evaluation of the entire property including exterior building and grounds, public areas, room decor and ambiance, guest room amenities, bathrooms, housekeeping and maintenance. Once the physical aspects of a property are considered to be at the Four Diamond level, services are evaluated by one of AAAs field inspector during an anonymous overnight stay. Hyatt Regency Maui Named Among Top 100 Golf Resorts by Conde Nast Travelers Readers Poll

KAANAPALI, Maui, Hawaii " July 7, 2008 " Hyatt Regency Maui was rated among the Top 100 Golf Resorts in Conde Nast Travelers June 2008 Readers poll. Only properties that received a required minimum number of top level responses were included in the rankings.

Some 2,800 Conde Nast Traveler readers evaluated 477 golf resorts that they had visited in the past three years. Properties were rated on six criteria: Design of Courses, Golf Staff & Service, Resort Service, Rooms, Food/Dining, and Activities/Facilities using a five-point scale of excellent, very good, good, fair and poor. Each score represents the percentage of respondents who rated a particular feature excellent or very good.

Hyatt Regency Maui received an overall score of 80 and its Activities/Facilities received a 92.0 score. Resort Service ranked 84.6 and Room and Food/Dining both received 81.5 scores. The 36-hole Ka-anapali Golf Resort, noted for its legendary golf through the foothills of the West Maui mountains with sweeping panoramas of Kaanapali coastline, was ranked 75.0 for its golf staff and service and 70.4 for course design.

This world-class golf facility has hosted many professional events including the Senior PGA Kaanapali Classic and the LPGA Kemper Open. The Resort South Course, redesigned by architect Arthur Jack Snyder, is 6,400 yards, par 70, and a more forgiving course with subtle undulating greens that accommodate all levels of play. Originally a sugar cane plantation, players will see the Sugar Cane Train steam pass several holes. The Tournament North Course is one of two courses in Hawaii designed by Robert Trent Jones, Sr. The 6,700 yard, par 71 course challenges club selection and putting skills. $8 Million Progressive Hawaiian Dining Venue Debuts

KA'ANAPALI, Maui, Hawaii (October 10, 2008) - 'Ūmalu, a casual yet upscale full service lunch and dinner venue showcasing modern contemporary Hawaiian cuisine, officially opened this weekend at Hyatt Regency Maui Resort and Spa with a traditional Hawaiian blessing. The restaurant is the latest edition to the resort's dining experiences, located poolside with views of the ocean, as well as Lana'i and Molokai islands.

'Ūmalu is situated into the hillside off the pool area, below the main resort tower. As 'Ūmalu in Hawaiian means "the shade under a cliff or to cast a shadow," guests can take a reprieve from the sun for a restful and soothing dining experience. With a rich stone faade entrance, guests will be invited into a room designed with tumbled stone or open air seating with the option of a cool flagstone area or actually dining at tables set on sand for a more beachside experience.

'Ūmalu's contemporary Hawaiiana menu showcases indigenous Maui flavors with "Local Style" entrees from simple to exquisite. Notable dinner fare such as Pan-Seared Scallops, Prawns and Island Mahi-Mahi with snow peas, baby bok choy, Hawaiian hamakua mushrooms,
